Anton and I had a really great weekend. I’ve posted some pictures from my phone of adventuring but the other things that happened were we finished watching Friday Night Lights ( LUKE! :( ) and we loved it. We found a possible place for our rehearsal dinner that had the most fantastic white lights on the outside and pumpkin ginger soup on the inside. Anton also went to a Magic the Gathering pre-release competition thing and basically kicked ass and ranked in the top 4. He can mention more on that later if he wants. I caught up with cat lovings and the mountain of laundry that we had created and also went to what turned out to be insanely intense yoga class on Sunday morning that I felt quite accomplished (and exhausted) after. Since we weren’t traveling this weekend or having many people over, I made some cool foods that I’d like to share because they all turned out good!
Saturday breakfast was this baked oatmeal with bananas and blueberries:
This is healthy, warm, and filling. A nice start to the day. Granted, it says it serves 6 and Anton and I ate the whole thing- but WHATEVER. We were hungry in the morning and weren’t having any sides or anything. Also, it was nice not packing in sugar into something that was being baked and instead using some honey.
Sunday for dinner I made this meatball and spaghetti soup:

It was GREAT. I give it 5 stars, Anton 4 1/2. Really easy and tasty. I definitely added the optional red pepper flakes to the sauce, just to give it a little something. The meatballs were delicious.
For Sunday dessert we had some of apple cider floats:

And Anton rather loved them. I was expecting a bit more, but they were definitely a good treat. Don’t skimp on the ice cream when/if you make it.
The best thing about all three of these? They actually come out looking like how they do in the pictures, and I’ll admit, I am a sucker for pretty food and HATE when I make recipes and they look totally different than in the picture.
Hopefully the recipes we are trying this week get good reviews. - M
